How To Grill Tilapia plus Ingredients needed
Banku, shito sauce, and grilled tilapia are popular food combinations in Ghana.
Tilapia is one of the abundantly supplied fish in Ghana. Alternatively, you can also grill the croaker following this method.
INGREDIENTS
1 large tilapia fish (1kg/ 2.21b)
1 finger of ginger, peeled
3 cloves garlic
3 spring onions
1 medium-sized onion
6 red cayenne peppers
1 seasoning cube
1/2 teaspoon of salt
2 teaspoon thyme
1 teaspoon curry powder.
5 scotch bonnet peppers

Waiting time: 2 hours

STEPS TO GRILL TILAPIA
Step 1
Clean the Tilapia by removing the scales and everything in the stomach, wash, and set aside.
Step 2
To make a marinade, combine all the ingredients and blend to paste. Taste for salt, you can add a little more salt.
Step 3
Using a sharp kitchen knife, make three incisions on both sides of the fish to help the marinade spread into the fish. Spread the marinade on the fish and keep it in the fridge for 1-4 hours.
Step 4
Grill the fish using an electric or gas oven, grill on medium heat, and remember to apply the marinade as it grills.
Step 5
Grill and flip, apply more marinade, and return to the oven. Once it is properly grilled, take it out of the oven and serve.
In Ghana, grilled or fried tilapia is served with ground pepper, shito sauce, banku, and sometimes chopped vegetables too.
