Preparation time: 40 minutes.
In Africa, we pound using a mortar and pestle. There are, however, more fancy pounding/processing machines that make the process a whole lot easier.
Step 1
Peel off the back of the plantain and cassava, chop into smaller chunks.
Step 2
Start boiling with just water, add the cassava first and cook for 15 minutes before adding the plantain.
The plantain cooks a lot quicker than the cassava, so you add the plantain after the cassava has been cooking for 15 minutes. add more water and continue cooking for another 15-20 minutes. Total cooking time should be 30-35 minutes.
Step 2
Strain and pound/mash while it is still very hot, it becomes harder to pound as it cools. You use a mortar and pestle or any heavy duty food processor.
Serve fufu and soup.
